Quick Easy tasty Khichdi / Healthy Snack for Kids
A Quick meal for people who are on fasting (Vrat) . It’s a pure Jain recipe so No onion & No garlic used. It can be quickly made and can be served as healthy snacks to the kids who generally don’t like to have lauki ki sabji (Bottle Gourd curry). Grate lauki(Bottle gourd) and finely chop ginger and green chilies. Dry roast peanut and grind it to a coarse powder. Heat oil in a pan and add cumin seeds and some curry leaves. Add ginger and green chilies to it and then add the grated lauki and sauté it for 2-3 mins then add salt, a little sugar, black pepper powder and some lemon juice to it. Then add the peanut powder to it and mix it well and cook for another 2-3 mins and then add coriander leaves for garnishing and serve it hot.

Instructions
  1. Grate the bottle gourd and keep it aside.
  2. Dry roast peanuts and then grind peanut, green chillies and ginger together to a coarse powder.
  3. Heat oil in a pan and add cumin seeds and curry leaves to it.
  4. Then add the grated bottle gourd and sauté it 3-4 mins.
  5. Add salt, black pepper powder, a little sugar and lemon juice to it.
  6. Add the peanut powder to it and cook for 3-4 mins.
  7. Garnish it with chopped coriander leaves and serve it hot with curd .
Recipe Notes

Fusion for Kids/Toddlers:-

Plate the khichdi in some shape  and decorate it as per your kids choice and serve it as it would be attractive for the kids. Or Bake some canopies and fill it with lauki khichdi topped with some tomato ketchup and serve it to the kids.
